Challenges in Jaffa cakes production: raw material quality and process parameters ( experiential )

The production process of Jaffa biscuit consists several stages: preparation and application of fat for lubrication of steel belt in the oven, mixing and aeration of the dough, baking process, preparation and deposit of jelly, preparation and application of chocolate coating, packaging process. This presentation need to show the influence of different process parameters on the production of Jaffa biscuit and its quality as well as corrections that can be applied directly on the line.
