Biography

José has been working with biscuits, crackers and other cereal snacks for 20 years now, at companies such as Nestlé, Mondelēz and Kellogg’s, in three South America countries. After graduating as a food engineer, he began his career working in the manufacturing sector, then moving to research and development, where he has still been since then, developing raw materials, products and processes, currently working as Product Development Manager at Kellanova. During these years, he was able to work on several projects, learning from many experts and companies around the world. Since 2020, he lives in Pato Branco, a small city in southern Brazil, with his wife and two children.

Working With Technology as a Team on Snack Projects

I will talk about process control and how to transfer technology from developing to manufacturing. How to set parameters: critical to quality, critical to process, (CTQ, CTP), how to define ranges for parameters, how to get more information from trials, to assure a better project delivery to manufacturing. Also, how to play as a team, how to document project needs from beginning along with a multidisciplinary team (Quality, Engineering, Marketing, Manufacturing, Safety, etc.). How to keep a good communication and mitigate risks during development stage and commissioning that might delay or even be critical to project success. This will be focused on Biscuits, as it is my main experience. In plan to use examples as well.
